When I use a trashmail email address I setup, and I receive an email from say a forum admin, I see it go to my real email address, but when I reply to it, does it use that trashmain address as the sender or my real email address?

If reply masquerading is enabled, you can reply to the Reply-To address, then it uses your TrashMail address.
The Reply-to address looks like *.reply.*@trashmail.com.
